Watermelon  BBQ Sauce

use on Ribs, Chicken, pork at final stage of grilling

Ingredients

  • Approximately 1 cup watermelon pieces ( mixed in blender)

  • Pulverize several pieces & add to sauce

  • 1/2 cup Karo syrup

  • 1/2 cup catsup

  • 2 TBL cooking oil

  • 1 TBL vinegar

  • 1 TBL steak sauce

  • 1/2 TEA prepared mustard

  • 1/2 TEA Worcestershire

  • 1/4 TEA garlic powder

  • 1/4 TEA salt

  • 1/4 TEA pepper

  • 3/4 TEA hot pepper sauce

  • 1/4 TEA ground cloves

  • 1/4 CUP "Midori" melon liqueur

Mix all ingredients in pot and simmer to desired thickness....

NOTE : IT MAY TAKE SOME TIME TO THICKEN, DEPENDING ON HOW MUCH WATER MELON YOU USED. TURN THE HEAT UP, IT WILL THICKEN, IT'S WORTH THE WAIT !

  Strawberry - Apple Chutney  

"This stuff is great on Grilled Chicken or Grilled chicken Kebabs"

Ingredients

  • 1/3 Cup Brown Sugar

  • 1 tblsp Water

  • 1/2 Cup Raspberry Vinegar

  • 1 Medium Apple, peeled, cored & finely chopped

  • 1 Teasp grated Ginger

  • 1 clove of garlic, minced

  • 1/2 small Jalapeno Pepper, minced

  • 1/4 teasp cilantro

  • Pinch of ground cloves

  • Pinch ground cinnamon

  • Pinch salt & pepper

  • 1 Pint strawberries, chopped

In a saucepan combine the sugar and water. Bring to a boil over medium high heat. Boil for  2 or 3 minutes, until the mixture caramelizes. Stir in the vinegar and apples, and return to boil. Reduce the heat to medium-low. Add the seasonings. Simmer for five minutes. Remove from the heat and pour the mixture in to a food processor or blender. Add half the strawberries. Process lightly. The mixture should be chunky. Pour into a bowl, mix in the remaining Strawberries.

Place the grilled chicken on plates and top with spoonfuls of chutney!

 

Chicken Cheese Soup
Idaho Heritage Inn B&B

3 Potatoes, Peeled & Chopped
1 Stalk Celery, Sliced
1 Carrot Grated
1 Onion, Chopped
1 Teaspoon Parsley
3 Tablespoons Butter
2 10 Oz. Cans Cream of Chicken Soup
1 16 Oz. box Velveeta Cheese
2 cups Chopped Cooked Chicken
Salt & Pepper to Taste

In a stock pot boil the potatoes, celery, carrot and onion in a small amount of water until tender. Add the Parsley, butter, and cream of chicken soup. Heat thoroughly. Add the cheese and stir until completely melted. Stir in the chicken, salt and pepper to taste.
